Roasted Red Cabbage and Sweet Potato Medley with Honey-Ginger Glaze
Ingredients:
- 1 medium head of red cabbage, chopped into wedges
- 2 medium sweet potatoes, peeled and cubed
- 2 tablespoons olive oil

Instructions:
1. Preheat the oven to 400°F (200°C).
2. In a large mixing bowl, toss the chopped red cabbage and cubed sweet potatoes with olive oil, salt, and pepper until evenly coated.
3. Spread the cabbage and sweet potato mixture onto a large baking sheet in a single layer.
4. Roast in the preheated oven for 25-30 minutes, turning halfway through, until the vegetables are tender and slightly caramelized.
